Remember the other day when I bought a spiral slicer thingamajig? Well, it came in and I tested it out!
Zucchini Pasta with Roasted Butternut Squash and Creamy Garlic Sauce
The spiral slicer is super easy to use and makes fun little strings of veggies! We {Josh helped with this recipe} used four zucchinis and after some trial and error we got the hang of it and ended up with a giant batch of raw zucchini pasta "noodles"!
Josh also had to help out here.... sliced and roasted butternut squash! Could have eaten this plain. Always and forever, I love roasted anything.
Nutty Garlic Sauce! Thanks to the brand new KitchenAid food processor!!! 2 garlic cloves, water, honey {or agave}, 2 cups of almonds and 2 cups of cashews. Process until smooth and saucey thick. Add more water if needed. P.S. this made a TON!!! We will be eating it for weeks....
Cook the "pasta" in boiling water for 2-3 minutes, then drain and top with the lovely butternut squash
We scarfed this meal down- completely pasta perfect. I didn't miss "real noodles" one bit!!! You could top these noodles with anything too- the flavor blends so well with its toppings.
