Eat Clean Meatballs


You don't have to have pasta to enjoy meatballs. And you don't have to host a party to enjoy meatballs. They make a great lunch or dinner on their own, and with this recipe they are packed with flavor but clean and lean. 

Eat Clean Meatballs

To make your  meatballs combine:
1 pound lean ground turkey
1 pound lean grass fed ground beef
Fresh Rosemary
Whole Rolled Oats or Whole Wheat Bread Crumbs
Worcestershire
2 Cloves minced garlic
Seasonings of your choice: consider cayenne, cumin, chili, garlic, onion, italian, parsley

Roll into golf sized balls and brown in a skillet on all four sides until almost cooked through

Don't let your boyfriend stick his greedy hands into the skillet to snatch one 

Saute down 1 sliced yellow onion, 2 sprigs of fresh rosemary, 2 T minced garlic with a touch of EVOO

Add in one jar of diced tomatoes with the sauce. Put the meatballs back into the pan and cover them with the liquid and onions. 
Finish cooking the meatballs in a 350 degree oven for 15-30 minutes depending on the original "doneness" of your meatballs. 

Plate with plenty of sauce and enjoy! 

The meatballs were best a couple of days later once they had ample time to soak up all of the flavor of the sauce. 
A great dish to make ahead and pack for lunches or serve as a quick weeknight dinner.

Isn't this a funny picture?!? The AC at work went out yesterday. Morgan and I were both wearing strapless dresses with jackets but had to do without the jackets for a while.
